Pistachio butter is less well-known than other nut butters, but if your favorite nut is a pistachio, it only makes sense to turn it into nut butter. Pistachio butter has a mild taste and a surprising green hue, so you might want to make it for the intriguing color alone.
Ingredients
- 0.5 cups roasted pistachios
- 2 teaspoons oil

Pour pistachios into the jar of a high powered blender, such as a Vitamix. Cover and blend on High for about 45 seconds; it will resemble a coarse meal. Drizzle in pistachio oil; blend until smooth. Season with salt.

Store in an airtight container in the refrigerator for up to 1 month, or in the freezer for up to 6 months.
