This quick eggplant recipe goes well with steamed green beans and French or Italian bread. Although it calls for seasoned bread crumbs, you can use regular ones. Adjust the amount of red pepper flakes according to your taste.
Ingredients
- 1 large egg
- 1 tablespoon water
- 1 cup dried bread crumbs , seasoned
- 1 small eggplant , cut into 3/4 inch thick slices
- 0.25 cups vegetable oil , or as needed
- 1.5 cups shredded mozzarella cheese
- 0.25 cups spaghetti sauce
- 0.25 teaspoons crushed red pepper flakes
- 3 tablespoons grated Parmesan cheese
Instructions

Beat together egg and water in a small bowl. Place bread crumbs in a shallow dish.
