This recipe for roasted Roma tomatoes features simple, fresh ingredients that are amazing together. Roast the tomatoes in the oven or on your grill. You want them cooked but still firm — and definitely not mushy.
Ingredients
- 8 Romas (plum) tomatoes , cut in half and seeds removed
- 0.25 cups extra-virgin olive oil
- 2 tablespoons chopped garlic
- 1 teaspoon chopped fresh parsley
- 1 teaspoon chopped fresh basil
- 1 teaspoon chopped fresh oregano
- salt and black pepper to taste
- 0.5 cups crumbled feta cheese

Preheat the oven to 375 degrees F (190 degrees C).

Mix together tomatoes, olive oil, garlic, parsley, basil, oregano, salt, and pepper in a large bowl, working the seasonings into cavities of tomatoes. Place tomatoes, cut-sides up, on a baking sheet. Sprinkle each tomato with about 1 tablespoon feta cheese.

Bake in the preheated oven until tomatoes are cooked but still firm, about 15 minutes.
