These roasted tomatoes are flavored with garlic and olive oil for a delicious side dish, or spoon them on top of warm pasta for a light meal.
Ingredients
- 4 cups grape tomatoes
- 4 cloves garlic , sliced
- 2 tablespoons olive oil
- salt and pepper to taste

Gather the ingredients. Preheat the oven to 450 degrees F (230 degrees C). Place a piece of aluminum foil over a baking sheet.

Place the tomatoes and garlic into a mixing bowl. Drizzle with olive oil, and toss until evenly coated. Season to taste with salt and pepper, then spread evenly onto the prepared baking sheet.

Bake tomatoes in the preheated oven until the skins pop and start to brown, 15 to 20 minutes.

Paleo Stuffed Cabbage
I love paleo stuffed cabbage rolls, also known as galumpkis, and wanted to share my own version with zucchini, which I also love. I made this recipe for a dinner party, and everyone commented on how delicious and light it was โ nobody realized I had swapped rice with cauliflower and zucchini. I was hoping for leftovers, but that was not the case!
Homemade Lasagna
This is my mom's special homemade lasagna recipe with a meaty, made-from-scratch tomato sauce and a deliciously cheesy filling. A more traditional homemade lasagna filling would be made with ricotta but my mom's recipe calls for a blend of small-curd cottage cheese and Parmesan. I have found none better anywhere. Serve with a leafy green salad and crusty garlic bread.
