Ground beef, onions, and carrots with tomato-basil sauce topped with mashed potatoes are baked for a delicious and easy comfort-food meal.
Ingredients
- 6 potatoes , peeled and cubed
- 4 carrots , peeled and sliced
- 0.25 cups milk
- 6 tablespoons butter , divided
- Salt and pepper to taste
- 1 onion , finely chopped
- 1.5 pounds ground beef
- 1 jar Classico® Tomato and Basil Sauce , 15 ounce
Instructions
-
1
Preheat oven to 400 degrees F (200 degrees C).
-
2
Place the potatoes and carrots in a large pot with enough water to cover. Bring to a boil and cook until tender, about 15 minutes; drain. Separate the potatoes and carrots. Place the drained potatoes back into the pot. Add milk and 2 tablespoons butter. Mash the potatoes, adding salt and pepper to taste.
-
3
Melt the remaining 4 tablespoons butter in a large frying pan over medium heat. Stir in the onions and saute until softened, about 10 minutes.
-
4
Increase heat to medium-high and add the ground beef. Cook and stir until meat is no longer pink and begins to brown; drain excess fat. Stir in the tomato-basil sauce.
-
5
Place the carrots in the bottom of an ungreased pie dish. Add the beef mixture evenly over the top of the carrots. Spread the mashed potatoes evenly over the top of the beef mixture.
-
6
Bake uncovered until the internal temperature reaches 165 degrees F, about 20 minutes.

Air Fryer Churros
Air fryer churros are a delicious cinnamon sugar treat. By using an air fryer instead of a deep fryer, it turns what's normally a guilty treat into a sweet treat. After over seven experiments creating this recipe, I have two pieces of advice: do NOT line the air fryer basket with parchment paper liner, and do NOT add the cinnamon sugar to the dough.
Eggs Benedict
Eggs Benedict is a brunch specialty consisting of hot buttered English muffins, Canadian-style bacon, and poached eggs topped with a rich homemade Hollandaise sauce. Wonderful for Easter, Mother's Day, or brunch anytime! If you're not a lemon fan, start with 1 tablespoon of lemon juice. If you like a tangy Hollandaise, you can add the full amount.
Easy Tuna Casserole
This easy tuna pasta casserole is made with macaroni, creamy soup, cheese, tuna, and fried onions. I got this tasty recipe from my roommate. It's great as leftovers, too.
