Lowcountry-style shrimp and grits with bacon at its best!
Ingredients
- 1.5 cups chicken broth
- 1.5 cups evaporated milk
- 0.75 cups quick-cooking grits
- 0.5 teaspoons salt
- 1 cup shredded Cheddar cheese
- 1 cup chopped raw bacon
- 2 tablespoons bacon drippings
- 1 pound uncooked medium shrimp , peeled and deveined
- 0.5 cups diced green bell pepper
- 0.5 cups diced onion
- 1 tablespoon shredded Cheddar cheese , or as desired
Instructions
-
1
Pour chicken broth and evaporated milk into a large saucepan and bring to a boil. Stir in grits and salt; return to a boil. Reduce heat to low, cover, and simmer grits, stirring often, until thick, about 5 minutes. Stir in 1 cup Cheddar cheese until melted. Set grits aside and keep warm.
-
2
Heat a large skillet over medium heat. Cook and stir bacon in the hot skillet until crisp, 8 to 10 minutes. Use a slotted spoon to transfer bacon to a paper towel-lined plate. Drain all but 2 tablespoons bacon drippings from the skillet.
-
3
Return the skillet to medium heat. Cook and stir shrimp, bell pepper, and onion in hot bacon drippings until shrimp are bright pink and no longer translucent inside and bell pepper is tender, 5 to 8 minutes. Stir cooked bacon into shrimp mixture.
-
4
Spread grits into a serving dish, top with shrimp mixture, and garnish with 1 tablespoon Cheddar cheese.

Baked Honey Barbecue Chicken
This baked honey barbecue chicken recipe is so easy to make with boneless chicken breasts and a delicious honey barbecue sauce. I like to use the extra sauce on mashed potatoes to complete the meal.
Matzo Ball Soup
This matzo ball soup is so rich and flavorful, there's no reason to wait until Passover to enjoy it! This recipe has been in our Jewish family for generations. Some family members say it started with our great-great-grandmother Bubbie Rose. My husband (her great-great-grandson) has put his own twist on it by adding extra vegetables and fresh dill which we think sets this soup apart from the rest.
Spinach Quiche with Chicken
This chicken quiche recipe works very well. Add seasonings of your family's choice for more variety. Use ham, bacon, or whatever protein. This quiche needs flavor boosters, so use your spice cabinet. Easily make this a Tex-Mex dish with diced green chiles and a touch of cumin. You could also add crumbled, freshly cooked bacon for more flavor. I served this with sliced avocado and tomatoes for a perfect light dinner.
