Ingredients

- 1 cup applesauce
- 1 cup mashed bananas
- 0.5 cups butter , melted
- 2 eggs
- 1.5 cups all-purpose flour
- 0.5 cups white sugar
- 0.5 cups brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 0.5 teaspoons salt

Preheat oven to 350 degrees F (175 degrees C). Spray 2 muffin tins with cooking spray or line with paper liners.

Whisk applesauce, mashed bananas, butter, and eggs together in a large bowl.

Combine flour, white sugar, brown sugar, cinnamon, vanilla extract, baking soda, and salt in a separate bowl. Fold into the applesauce mixture until batter is just combined.

Divide batter evenly among muffin tins, filling each cup almost full.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes.

Shrimp and Orzo Salad
There are so many shapes of pasta out there. One of my favorites is orzo: rice-shaped pasta. I do not see it used as often as its more popular relatives like spaghetti, penne, linguine et al, which is a shame. I love the fact that orzo can be treated like rice and used to make tomato-based (jollof) or stir-fried dishes. It can be creamy like a risotto or made like rice and served with a stew or sauce. Here I use it to make a cold salad with shrimp and sweet cherry tomatoes. Use a lot of garden-fresh herbs to elevate this salad and feel free to add more vegetables if you want.
Double-Decker Marshmallow Fudge
A layer of homemade marshmallow batter is poured over a pan of fudge to make a truly decadent version of this holiday favorite.
Artichoke Chicken Casserole
This chicken artichoke casserole is great over orzo pasta with steamed broccoli or asparagus on the side. My husband and 4-year-old son love this recipe. We have it for dinner at least twice a month.
