Singkamas (also called bangkwang or jicama) is a delicious Filipino salad, terrific for picnics or any outdoor fun.
Ingredients
- 1 large jicama , peeled and cut into matchsticks
- 1 red bell pepper , cut into long thin strips
- 1 green bell pepper , cut into long thin strips
- 1 small red onion , sliced lengthwise into thin slivers
- 2 greens chile peppers - halved lengthwise , seeded, and cut into strips
- 1 carrot , cut into matchsticks
- 1 , 2-inch
- 1 cup water
- 0.67 cups vinegar
- 0.67 cups white sugar
- 1 teaspoon salt

Combine jicama, bell peppers, onion, green chile peppers, carrot, and ginger in a large bowl.

Whisk water, vinegar, sugar, and salt together in a separate bowl; pour over vegetable mixture and toss to coat. Refrigerate for at least 1 hour before serving.
