Ingredients
- 1 can salmon , 7 ounce
- 1 package cream cheese , 4 ounce
- 1 drop liquid smoke flavoring , or to taste
- 1.5 tablespoons chopped green onion
- 1 teaspoon prepared horseradish
- 0.25 cups chopped fresh parsley , Optional

Drain and flake the salmon into a bowl; reserve 1 teaspoon of the salmon liquid. In another bowl, mash the cream cheese, liquid smoke flavor, and the reserved salmon liquid until thoroughly combined; stir in the green onion and horseradish. Gently mix with the flaked salmon, and refrigerate at least 2 hours. If desired, form the spread into a ball, and roll in chopped parsley.

Hunan Chicken and Vegetables
The owner of the Chinese restaurant in our town was nice enough to show me how to make his Hunan chicken (my favorite!) when they sold the restaurant in December, 2012. He used a wok over a huge gas flame in his restaurant kitchen and whipped this up in about 3 minutes! We home cooks have to make do with a saute pan, and a home stove won't cook nearly as fast as his wok on a flame.
