This is a healthy and simple soup I whipped up for the Vitamix. Can easily be made vegetarian or vegan by substituting vegetable broth and/or non-dairy milk. You can reserve some of the microwaved broccoli and potatoes and add them after blending if you like more substance to your soup. Enjoy!
Ingredients
- 1.5 teaspoons olive oil
- 0.5 small onion , diced
- 2 potatoes , diced
- 1 head broccoli , cut into florets
- 1 cup milk
- 1 cup chicken broth
- 0.13 teaspoons ground black pepper
- 0.13 teaspoons sea salt
- 0.13 teaspoons ground ginger
- 0.13 teaspoons ground thyme
Instructions
-
1
Heat olive oil in a skillet over medium heat; saute onion until translucent, 5 to 10 minutes.
-
2
Spread potatoes and broccoli onto a microwave-safe plate. Cook in microwave until tender, 4 to 5 minutes.
-
3
Place onion, potatoes, broccoli, milk, chicken broth, pepper, salt, ginger, and thyme in the Vitamix or blender. Start on variable 1, slowly increase to variable 10, and end on high for 4 to 5 minutes. Serve hot.

Authentic Swedish Pancakes
This Swedish pancakes recipe was taught to my father by his mother, who was born in Sweden. My father then passed this authentic recipe to me. Kids love them, and there are never any leftovers when I make them. Spoon melted butter over the pancakes and sprinkle with sugar or serve with lingonberry sauce. The pancakes can be made into larger cakes; however, the yield will be smaller. You can also use the batter to make crepes.
Million Dollar Fudge
I have had this recipe for years; it makes an especially creamy fudge. Store in an airtight tin box.
Trail Mix Cookies
I was determined to make a tasty, guilt-free cookie and I am very pleased with how these turned out. They're not very sweet but have a subtle flavor of applesauce and cinnamon mixed in with chocolate chips, nuts, and dried cranberries.
