What's the key to these six-ingredient soft gingerbread cookies? Spice cake mix. Perfect for last-minute holiday baking and gift-giving, these pillowy cookies are almost too easy to throw together on a whim. If you're craving a more intense flavor, you can always increase the ginger to two teaspoonsโbut be aware that most store-bought spice cake mixes already pack a pretty strong punch.
Ingredients
- 1 ounce cake mix
- 1.5 teaspoons ground ginger
- 0.25 teaspoons ground cloves
- 1 large egg , at room temperature
- 0.33 cups vegetable oil
- 0.25 cups molasses
Instructions
-
1
Preheat the oven to 350 degrees F (180 degrees C). Line a baking sheet with parchment.
-
2
Whisk together cake mix, ginger, and cloves. Stir egg, oil, and molasses into the cake mix mixture until combined.
-
3
Using a cookie scoop or tablespoon, drop the dough about two inches apart onto the prepared baking sheet.
-
4
Bake in the preheated oven until cookies are set, 10 to 12 minutes. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Beef Egg Rolls
Beef egg rolls stuffed with ground beef, cabbage, and delicious seasonings, then fried until crispy. This personal creation of mine goes well with any Chinese dish. The sherry makes it better.
Carrot Pulp Muffins
Looking at the mound of carrot pulp from my juicer and then at my 2 1/2-year-old daughter (who loves bread) inspired me to experiment with carrot pulp recipes. This muffin is dense, healthy, and can be tweaked to suit your tastes. As is, it is not sweet, but you could certainly add mashed ripe banana or pineapple. Once out of the oven, sprinkle the tops with cinnamon sugar while they are still hot.
Marvelous Mongolian Meatballs
My meatball recipe inspired by Chef John's Mongolian Pork Chops is absolutely delicious. A wonderful recipe for a party. Serve them as an appetizer with toothpicks, and they will disappear before your eyes. They can also make a meal sandwiched in a hero or over a bed of pasta.
