Enjoy this spinach and tortellini salad recipe as an entrée or a side salad on a warm summer evening. Try it with garlic breadsticks.
Ingredients
- 1 package cheese-filled tortellini , 9 ounce
- 2 cups cherry tomatoes , halved
- 1 package frozen chopped spinach , 10 ounce
- 0.33 cups grated Parmesan cheese
- 1 can sliced black olives , 2 ounce
- 1 bottle Italian-style salad dressing , 8 ounce
- salt and ground black pepper to taste

Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, until tortellini float to the top and the filling is hot, about 3 minutes. Rinse under cold water; drain.

Combine tortellini, tomatoes, spinach, cheese, and olives; add enough salad dressing to coat. Toss; season with salt and black pepper.
