Jalapeño Cornbread Muffins
I love that these jalapeno cornbread muffins combine south-of-the-border flavors from my adopted cuisine, Tex-Mex, with my southern Kentucky roots. Cornbread is so easy to stir up, and this recipe spices it up a little, with the addition of jalapeño, onions, and a little taco seasoning mix for good measure. The recipe makes 12 muffins, but my Hubby had three!
Roasted Chickpeas
Roasted chickpeas are a delicious crispy snack or garnish you can make with cooked or canned chickpeas. Plan ahead so the chickpeas can dry before you roast them — that way, they cook up perfectly crisp and golden brown. Season to taste with spices.
Best Christmas Fruitcake
This fruitcake is a deliciously moist cake full of rum-soaked dried fruit and nuts. There's no glowing, candied fruit in this recipe, and it's more cake-like than traditional fruitcake recipes. It's easy to make and sure to be a hit with your family and friends.
