Citrus Mousse
This is fast and elegant--everyone always thinks it must be a complicated recipe but it's shamefully simple. I don't know why, but I always confess after serving it that it only took a few minutes to make. Either pour it into one bowl or individual serving dishes, and garnish with fresh fruit, such as strawberries or mandarin slices. Try it with pineapple or lime juice in place of the grapefruit, if you like!
Frosted Pumpkin Bars
These bars mix up quickly. They are moist and delicious with a wonderful cream cheese frosting. They are especially good when chilled in the refrigerator before serving.
Zucchini Lasagna with Beef and Sausage
This zucchini lasagna with beef and sausage is perfect if you have extra squash from the garden, or if you're following a South Beach or Atkins diet. It replaces lasagna noodles with slices of zucchini, but still tastes like the lasagna you love!
