Versatile cream cheese frosting flavored with sugar-free instant pudding. It will frost one 9x13 or one 2 layer cake. Use any flavor of pudding mix.

- 1 package sugar-free instant pudding mix , 1.4 ounce
- 1.75 cups milk
- 1 package cream cheese , 8 ounce
- 1 container lite frozen whipped topping , 8 ounce

In a medium bowl, combine pudding mix and milk. Mix well and let stand until thickened.

In a large bowl, beat cream cheese until smooth. Add pudding and mix well. Finally, fold in whipped topping.

Wonderful, dark Swedish limpa bread.
Country Breakfast Burritos
Country gravy, bacon, sausage, onion, cheese, egg, and Tater Tots® wrapped in a burrito. Our 2-year-old loves Tater Tots® and frozen Jimmy Dean® turkey sausage links so much that we buy them both in bulk at Costco. My family also loves bacon, so we buy pre-cooked bacon to cut down on the fat. Our meal ultimately cost only $2.75 per person.
Black-Eyed Pea Patties
Black-eyed pea patties made with bacon, shallots, and roasted red peppers are pan-fried until golden brown and crispy. This recipe calls for canned peas, but for more flavor, I sometimes use leftover peas that I cooked with ham hocks or smoked turkey from New Year's. Get creative with how you serve them; sometimes I top them with fried green tomatoes or leftover candied yams.
