Basil and sun-dried tomato add flavor and zing to this simple yet delicious orzo pasta salad recipe. It's perfect for picnics and great served warm or cold.
Ingredients
- 2 cups dri ed orzo pasta
- 0.5 cups chopped fresh basil leaves
- 0.33 cups chopped oil-packed sun-dried tomatoes
- 0.75 cups grated Parmesan cheese
- 2 tablespoons olive oil
- 0.5 teaspoons salt
- 0.5 teaspoons ground black pepper

Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, 8 to 10 minutes. Drain and set aside.

Add basil leaves and sun-dried tomatoes to the bowl of a food processor; pulse until blended, 4 or 5 times.

Toss orzo, basil-tomato mixture, Parmesan cheese, olive oil, salt, and pepper together in a large bowl;. serve warm or chilled.

Paleo Stuffed Cabbage
I love paleo stuffed cabbage rolls, also known as galumpkis, and wanted to share my own version with zucchini, which I also love. I made this recipe for a dinner party, and everyone commented on how delicious and light it was — nobody realized I had swapped rice with cauliflower and zucchini. I was hoping for leftovers, but that was not the case!
Korean Fried Chicken Sauce
This is my take on the classic Korean fried chicken sauce. I like to add lots of green onion and garlic, and not cook this quite as long. The result is a sauce with those ingredients a little more in the flavor profile's forefront. Try to find Korean chili flakes and/or paste if you can. I've used them before and the flavor is great (and obviously more authentic), but if you can't, any hot chili flakes or paste will work.
Watermelon Lemonade
This watermelon lemonade is a light and refreshing summer drink that's easy to make with pureed watermelon and homemade lemonade. Garnish each glass with a slice of watermelon if you like.
