This red pepper salad with baby spinach leaves is delicious and takes no time at all to prepare! It goes with almost any entrée.

- 1 package baby spinach , 6 ounce
- 1 red bell pepper , chopped
- 0.5 cups grated Parmesan cheese
- 0.25 cups olive oil
- 0.25 cups rice vinegar

Combine baby spinach, red bell pepper, and Parmesan cheese in a large bowl.
