Sofrito
Sofrito is the base for most Puerto Rican dishes, and this one is better than store-bought (it's difficult to find in the stores in the western United States). Sofrito can be added to beans, rice, soups, and stews; you name it.
Easy Chicken Street Tacos
I go to my local Mexican Market and buy "pollo para asar" which translates to "chicken to grill." This chicken is seasoned and ready to grill. These delicious tacos are easy to make and topped with cilantro and onions. I serve them with guacamole, salsa and fresh lime wedges on the side.
Cheesy Ham and Asparagus Bake
This asparagus and ham casserole is one you have to try, even if you think you don't like asparagus. It is a wonderfully easy quiche-like casserole to throw together for breakfast. This can be prepared the night before, covered, and put in the refrigerator overnight. Just be sure to allow extra cook time.
