This tomato cucumber salad is simple to make with diced cucumber and ripe summer tomatoes. I like to add lemon juice instead of vinegar for a bright citrusy flavor.
Ingredients
- 2 ripes tomatoes , chopped
- 1 cucumber , peeled and diced
- 1 small white or red onion , chopped
- 1 tablespoon lemon juice or to taste
- salt and ground black peper to taste
