Here I've taken ube and made a delicate panna cotta that not only tastes divine, but is shockingly gorgeous too, thanks to its natural purple hue! Ube is a purple yam, a popular sweet treat in the Philippines that's made into jam, cookies, and more.
Ingredients
- 1 ube (purple yam) , peeled
- 1.5 cups whole milk , divided
- 1 cup coconut milk
- 0.5 cups white sugar
- 1 package unflavored gelatin , .25 ounce

Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add ube, cover, and steam until tender, about 20 minutes. Cool until easily handled, about 10 minutes. Purée ube in a blender or food processor, or thoroughly mash it by hand.

Combine 1 cup puréed ube, 3/4 cup whole milk, coconut milk, and sugar in a blender or food processor; blend until completely smooth.

Pour remaining 3/4 cup whole milk into a saucepan. Sprinkle gelatin on top and let stand for 5 minutes.

Heat milk-gelatin mixture over medium-low heat, stirring until gelatin is dissolved, 3 to 5 minutes. Pour in ube mixture and increase the heat to medium. Heat until steam starts to rise from the mixture, stirring occasionally, 3 to 5 minutes.

Pour mixture into individual serving glasses or molds. Transfer to the refrigerator and chill until set, about 3 hours.

Essene Bread
Essene bread is made with sprouted wheat berries. This is a very old recipe — said to have been created in biblical days. It takes days to make, but your efforts and time will be rewarded with a couple of protein-rich, sweet, and moist loaves of bread. Traditionally, Essene bread was probably baked on hot rocks under scorching sunlight, but where I and most of us live, this is not possible. Baking at the oven temperatures which I suggest might destroy the sprout enzymes, but monitoring baking loaves for much longer than 2 hours is too long for me. Guaranteeing the preservation of the enzymes might require baking at a very low temperature for perhaps 4 hours. If you have the stamina, then go for it.
