Great use of a fall vegetable. We have it every year for the holidays.
Ingredients
- 1 butternut squash , halved lengthwise and seeded
- 0.25 cups butter , divided
- 0.25 cups brown sugar , divided
- 0.13 teaspoons apple pie spice
Instructions

Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.

Place squash, cut-side up, on the prepared baking sheet. Place 1 tablespoon butter and 1 tablespoon brown sugar into the cavity of each squash half.

Bake in the preheated oven until skin is crispy and flesh is tender, about 1 hour. Cool until squash is easily handled, about 10 minutes.

Scoop flesh into a large bowl; add remaining butter, brown sugar, and apple pie spice. Whip squash mixture with an electric mixer on medium speed until fluffy.

Mama's Oh-So-Savory Lamb and Eggplant Casserole
The basis of this lamb and eggplant casserole recipe came from my 4th grade teacher's mother who was Armenian, and I've been making it for over 50 years. It is easy to put together, but the longer the stovetop step simmers, the better the casserole will be when served. The leftovers are yummy! You could serve this over rice, if you like, with a green salad. I just serve it in pasta bowls with crusty bread, butter, and a nice glass of red wine.
Kid-Approved Banana Bread
This bread is moist and delicious, relatively low in fat, and constantly requested by my four kids for snacks or their school lunches. They even avoid eating all the bananas so there are enough left to ripen to black for banana bread! Freezes well too. Just cool fully and place in an airtight bag or container.
