This Yorkshire pudding recipe is a yummy and traditional addition to the holiday feast. If you intend to make this, the timing has to be just right. I suggest preparing the mixture the evening before and having it ready while the roast beef is cooking.

Pour beef drippings into a 9x12-inch baking dish and place in the preheated oven until drippings sizzle. Pour batter over drippings and bake until the sides have risen and turned golden brown, about 30 minutes. Cut into 8 portions and serve immediately.

Pork, Sauerkraut and Dumplings
Pork roast and kraut slow-cooked and served with dumplings and sauerkraut 'gravy.' This recipe was from my mother's very German family. She always served it with mashed potatoes, creamed peas, and applesauce. Sometimes she baked the roast and kraut separately. We always have this on New Year's Day. I usually double the recipe for the dumplings. My mother didn't make hers with beer, but I have added this over the years to taste.
