Roasted Winter Vegetable Soup
This is a tasty and satisfying pureed soup that makes the best of the humble produce that winter farmers' markets have to offer.
Butternut Squash and Parsnip Soup
This butternut squash and parsnip soup recipe is a fall favorite of ours. The flavors of the butternut squash and roasted parsnips together are a match made in heaven!
Red Curry Coconut Squash Soup
This red curry coconut squash soup has such an amazing balance of flavors and has officially become my favorite soup. Perfect for a chilly fall day! The fall weather always serves as inspiration for soup, especially butternut squash soups. I wanted to put a spin on the typical squash soup this time, though. Optional garnishes include sliced scallions, toasted squash seeds, or shrimp. I highly suggest the toasted squash seeds as a garnish. They really add a lot!
Gisela's Butternut Squash Soup
This is a recipe given to me by my mother before she passed away. As with anything involving butternut it's a little time intensive but it's well worth it! So creamy and delicious! Garnish with croutons and/or parsley, and serve with garlic bread.
Curried Squash-Mushroom Soup
This flavorful and nutritious curried butternut squash-mushroom soup recipe is creamy, rich, and just like my gramma used to make.
Creamy Butternut Squash Soup with Fresh Ginger and Quinoa
This is a healthy and complete winter food. For thicker soup, add a cubed potato with the squash. Also good served with some sour cream or yogurt.
Roasted Butternut Squash and Fennel Soup with Citrus
Roasted butternut squash, fresh fennel, onions, and garlic are blended with spices, marmalade, and cream for a deliciously decadent soup that's the perfect starter for your holiday feast! My favorite way to garnish this roasted butternut squash and fennel soup with citrus is to whip up additional heavy cream until soft peaks form, then top each bowl with a small dollop. I then lightly drizzle each dollop with extra marmalade that's been melted in the microwave for 10 to 20 seconds.
Roasted Butternut Squash, Garlic, and Apple Soup Recipe
In this roasted butternut squash, garlic, and apple soup recipe, butternut squash, sweet potato, carrot, and garlic are roasted in large pieces and added to onion, celery, apple, and vegetable broth. An immersion blender thickens without adding fat. If you prefer more savory flavors to spicy ones, use curry powder instead of cayenne pepper. You can use apple juice in place of cider, and chicken broth instead of vegetable broth.
Instant Pot® Butternut Squash and Pear Soup
Peeling and chopping butternut squash can be quite a chore, but not using this method! By precooking the squash in your Instant Pot®, the skin will slip right off, allowing you to make this quick and flavorful soup in just minutes! The pears add just the perfect amount of sweetness with no need to add in extra sugar. Garnish with a light drizzle of cream to serve.
Roasted Butternut Squash Soup with Apples and Bacon
I created this roasted butternut squash soup with apples and bacon recipe on Christmas Eve, which was a huge hit. The caramelized roasted squash gives the soup extra depth of flavor. This soup has a very creamy consistency but is completely dairy-free except for the optional garnish of sour cream (I did this on purpose due to a guest who was allergic to dairy). It is also extremely healthy. Don't shy away from the curry powder; it gives the soup extra flavor. Feel free to play around with the amount of carrot, onion, celery, or garlic to your taste. This soup can be made the day before and reheated.
Butternut Soup
A creamy butternut squash soup to make in the microwave. Adapt the recipe to suit your taste, with nutmeg, cloves, and cinnamon.
Butternut Squash Soup with a Kick
This is a great butternut squash soup with a kick recipe that will warm you up in a hurry. It's great any time of year. You can adjust the amounts of jalapeño, ginger, and sour cream to whatever you like. You can vary the amount of sour cream depending on how hot you want the soup to taste.
