Vegan Pumpkin Chili
Easy vegan chili. You can saute the onions, peppers and garlic for a better flavor, but it's not necessary.
Instant Pot Vegan Chili con Yaca
This Texas-style chili uses chunks of jackfruit mixed with beans and veggies to create a hearty meal even meat lovers will enjoy. Using bitters, liquid smoke, and dark soy sauce creates a smooth flavor similar to Worcestershire sauce; while stout beer and coffee lend a depth of flavor and body associated with traditional chili con carne. This recipe makes a full 7 quarts, good for your get-together or freeze some. Serve with cheese, sour cream, and avocado if desired.
Cincinnati-Style Chili
This is a vegetarian version of Cincinnati chili, similar to Skyline's. It features delicious spaghetti topped with hot chili โ it's got all the food groups!
Meat-Lovers' Vegetarian Chili
This is a thick, hearty vegetarian chili that is a hit at parties, even among die-hard meat eaters. The TVP gives it the texture of ground beef, and the chiles give it a nice depth of flavor. Cook it in the slow cooker or on the stovetop. This recipe really benefits from using the best quality ingredients you can find. Also, I find this tastes best after sitting in the fridge overnight and reheating the next day. Serve with grated cheese on top.
Summer Vegetarian Chili
Throw summer's fresh vegetables into a pot and stew them up for an antioxidant-packed, Southwestern-flavored treat. Black beans also have fiber, folic acid and cholesterol-lowering activity.
Pub-Style Vegetarian Chili
This vegetarian chili recipe is spicy but flavorful. Trust me, you won't miss the meat! We love to pair this with one of our favorite microbrews.
Dutch Oven Chili Colorado
No beans, no tomatoes. Dutch oven recipe for Chili Colorado (adapted from The Complete Meat Cookbook by Aidells and Kelly).
Beef Chili (No Beans)
When the fall weather moves in, it's time to make this delicious chili. Serve over a piping hot sweet potato.
German Texas Chili
Fred is German and I am Texan! This creation is a blend of the two! Have a different ethnic background? You can easily add spices and other ingredients to make it your own, although, we have to say - it's quite good the way it is. This can easily be prepared the day before or put into the freezer for later use. Serve over baked potato or corn chips with 'fixins' such as sour cream, grated cheese, onions, etc. For a richer flavor, you are able to make this dish the night before and keep in refrigerator until the next day. Enjoy!
Rich's Green Chile
After years of trying other Hatch chile recipes, and always enjoying the ones here at home in Colorado, I've finally perfected my own. Serve with tortillas in a bowl, or however you want!
Saint Charles Mesa Sun-Kissed Chili
Made from the famous Pueblo, Colorado chiles grown on farms in the fertile and sun-kissed Saint Charles Mesa, this pork chili can be made from medium-hot to con fuego! These chiles are comparable to mild jalapenos or can be much hotter than cayenne peppers. Choose your peppers carefully for the heat you can handle! Our family's favorite ways to eat this include: with warmed tortillas, over rice, topped with tomatoes, sour cream and avocado, or smothered tamales (steam any type of tamales separately, unwrap, and pour chili on top).
Smoky Beef and Bacon Chili
A smoky, spicy, hearty chili with bacon and ground beef. Serve with your choice of toppings--sour cream and Cheddar cheese work well.
