Mediterranean Chickpea Pasta Salad
This Mediterranean chickpea pasta salad recipe is picnic-friendly, vegan, and gluten free. I created this salad for friends who can't eat gluten or dairy. I used produce just harvested from my garden, but you can change-up the vegetables based on what you have on hand. If you're not dairy-free, feta cheese is a great addition.
Belizean Chicken Stew
I learned how to make this chicken stew when I dated a Belizean man for about a year. He is long gone, but I still make his stew, and I love it! This is a very healthy dish, but the limes and the hot sauce make it very flavorful. Serve with corn or flour tortillas. Each person may want to spice it up with more hot sauce as they prefer.
Nicole's Best Baked Ziti
For Sunday suppers, team dinners, or dinner drop-offs for a friend in need, this crowd-pleasing baked ziti with sausage is hearty, rich, and flavorful. Perfectly baked pasta absorbs flavor from the tangy tomato sauce, contrasting beautifully with the creamy ricotta mixture. This budget-friendly meal tastes like you spent all day making it! Serve alongside crusty bread, an Italian salad, and a glass of red wine.
