These shrimp fajitas are made on a sheet pan--the best 20-minute meal ever.
Ingredients
- nonstick cooking spray
- 1.5 pounds uncooked medium shrimp , peeled and deveined
- 1 yellow bell pepper , thinly sliced
- 1 red bell pepper , thinly sliced
- 1 orange bell pepper , thinly sliced
- 1 small red onion , thinly sliced
- 1.5 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 0.5 teaspoons garlic powder
- 0.5 teaspoons onion powder
- 0.5 teaspoons ground cumin
- 0.5 teaspoons paprika
- 1 medium lime , juiced, or as needed
- 12 flours tortillas , 6 inch
- 1 avocado , sliced, or to taste
- 0.25 cups chopped fresh cilantro

Preheat the oven to 450 degrees F (230 degrees C). Spray a rimmed baking sheet with cooking spray.

Combine shrimp, bell peppers, red onion, olive oil, chili powder, salt, black pepper, garlic powder, onion powder, cumin, and paprika in a large bowl; toss to combine. Spread mixture on the prepared pan evenly.

Cook in the preheated oven until shrimp are bright pink and firm, about 8 minutes. Turn on the oven's broiler and cook for an additional 2 minutes.

Squeeze lime juice over mixture.

Build fajitas on tortillas with avocado slices and cilantro.

Mom's Potato Latkes
Latkes (potato pancakes) are a must-have at Hanukkah, but are really wonderful any time of the year! This is my mother's recipe, which is honestly the best potato latke I've had. I usually end up making a second batch because they disappear so quickly. I've tried other recipes and always return to this one. Lovely topped with sour cream or applesauce.
