You only need 4 ingredients for these mini pepper pizza bites. The first thing to go whenever I host a Super Bowl party, they are crunchy, saucy, and cheesy, plus lower in carbs than traditional pizza bites.
Ingredients
- 8 ounces mini bell peppers
- 0.75 cups marinara sauce
- 0.5 cups shredded mozzarella cheese
- 1 ounce pepperoni slices
Instructions
-
1
Preheat the oven to 350 degrees F (180 degrees C) and line a baking sheet with parchment. Place sliced mini bells on the baking sheet, cut sides up.
-
2
Divide marinara sauce between peppers using a small spoon. Top peppers with cheese. Place 3 slices of mini pepperoni on top of cheese in each pepper.
-
3
Bake in the preheated oven for 12 minutes. Turn the oven's broiler to High, and broil peppers until cheese is melted and starting to brown, about 3 minutes.

Traditional Canadian butter tarts with a delicious twist - dried cherries replace the standard raisins, and the optional melted toffee bits provide a sweet, chewy topping.
Grandma's Soul Food Pancakes (with Plantains)
My grandmother is from Mississippi. I call these her 'soul food' pancakes because she grew up at a time when people who had very little made simple meals taste super delicious. Every Sunday before church, she made these pancakes to get us out of bed. They have a crepe like texture but are still pancakes and are delicious.
Zucchini Slaw
This zucchini slaw recipe makes a warm slaw that's a perfect topping for burgers, but it's wonderful all by itself.
