This zucchini slaw recipe makes a warm slaw that's a perfect topping for burgers, but it's wonderful all by itself.
Ingredients
- 1 teaspoon olive oil
- 2 medium zucchini , finely chopped
- 0.5 medium onion , finely chopped
- 1 bunch chopped fresh parsley
- 3 tablespoons Italian salad dressing

Heat oil in a large skillet over medium-low heat. Add zucchini and onion; cook until tender. Stir in parsley and dressing; cook until heated through. Serve warm.

These turkey kofta kebabs were introduced to me about 20 years ago by my Persian neighbor. I never actually got his recipe, but I'm pretty good at replicating flavors, and these came pretty close. He made them with beef but using turkey instead makes these a lot lighter.
Mom's Spiced Pumpkin Pie
This is a spicier version of pumpkin pie. This recipe has been in our family for over 50 years and is always much enjoyed at holiday meals. The fresher your spices, the better this will taste! Serve with whipped topping, if desired.
