This microwave cornbread literally takes me 5 minutes to get on the table —including absolutely all the steps. I'll be honest; it tastes better baked in a regular oven. But it's still pretty darn good in the microwave, and sometimes I only have 5 minutes!
Ingredients
- 0.5 cups all-purpose flour
- 0.5 cups cornmeal
- 0.5 cups milk
- 1 large egg
- 2 tablespoons white sugar
- 2 tablespoons vegetable oil
- 2 teaspoons baking powder
- 0.25 teaspoons salt

Mix together flour, cornmeal, milk, egg, sugar, oil, baking powder, and salt in a microwave-safe glass or ceramic bowl until well combined.

Heat in the microwave on high until a toothpick inserted into the center comes out clean, about 3 minutes. Rotate the bowl halfway through cooking if the microwave does not have a turntable.
