This crispy corned beef hash is made in the air fryer from start to finish. It's great if you're looking for something to do with leftover corned beef.
Ingredients
- 1 pound red potatoes , cubed
- 0.5 cups chopped green bell pepper
- 0.5 cups chopped onion
- 2 teaspoons vegetable oil
- 0.5 teaspoons paprika
- salt and ground black pepper to taste
- 1 cup cubed leftover corned beef
- 2 eggs

Preheat an air fryer to 400 degrees F (200 degrees C).

Combine potatoes, bell pepper, and onion in a large bowl. Add vegetable oil, paprika, salt, and pepper. Stir until potatoes are evenly coated. Transfer mixture to the air fryer basket.

Cook in the preheated air fryer for 10 minutes. Shake the basket and cook for 5 minutes. Stir in the corned beef and cook for 5 more minutes.

Make two small wells in the mixture. Crack an egg into each well. Cook until eggs are set and cooked to desired doneness, about 3 minutes.

Nanaimo Bars
These Nanaimo bars have three layers but are well worth the effort. My son is famous for making and taking these to work. I've heard other names, but everyone knows them as Nanaimo bars here in the Northwest. They are sold on British Columbia Ferries and at coffee stands.
Pina Colada Cake (Hybrid Pineapple Upside-Down Cake)
This is a hybrid pineapple upside-down cake which I've developed over the years. Instead of pineapple rings, I use crushed pineapple, coconut, and honey. It is very important to cool the mixture of butter and brown sugar before covering it with the rest of the ingredients, preventing the layer of pineapple and the cake mix from mixing prematurely. Makes one 9x13 baking pan.
Slow Cooker Chicken and Vegetables
Add some color to your slow cooker chicken and veggies, by browning the chicken skin beforehand. Not only is it more appetizing, it tastes better, too. Prep all the veggies, load them into the cooker, and place the browned chicken on top. No need to add any liquid, either, as everything slow roasts in the pot! Serve with a salad and some bread to complete the menu.
