These air fryer truffle polenta fries, flavored with truffle-infused oil and truffle zest, are crispy on the outside, tender and juicy on the inside. I like to serve them alongside a steakโsteak frites so to speak. Serve with any dipping sauce; I recommend a spicy mayo, marinara, ranch, or ketchup.
Ingredients
- 1 tube polenta , 18 ounce
- 1.5 tablespoons black truffle-infused olive oil
- 1.5 teaspoons truffle zest seasoning
- 2 tablespoons shredded Parmesan cheese
- 2 teaspoons fresh parsley

Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions. Line a baking sheet with paper towels; set aside.

Cut the tube of polenta in half widthwise. Cut each half in half lengthwise and then cut into 1/2-inch wide fry-shaped sticks.

Whisk truffle-infused olive oil and truffle zest in a bowl. Add fries and gently toss to coat.

Place fries in the basket of the air fryer in a single layer. Depending on the size of your air fryer, fries may need to be cooked in batches.

Cook for 10 minutes. Shake the basket and cook 5 minutes more. Using tongs, transfer fries to the prepared baking sheet. Garnish with Parmesan and chopped parsley.

Persian Cucumber Yogurt (Maast-o Khiar)
This cool and healthy dip can be served along side rice and meat, or simply with bread. No Persian meal is complete without Maast-o khiar! This dish is best if refrigerated for a few hours, but if you are strapped for time feel free to serve after mixing. Don't be afraid to get creative! Try adding spinach, raisins, or walnuts. Other herbs could be used as well (i.e. mint, tarragon, oregano). More cucumbers, less shallots...it's your call! Enjoy!

I got the basics of this recipe from a friend of mine and thought it was a great idea since these little nests can be made ahead, which I love. They are delicious, easy to make, and can be customized to your own tastes. I not only use the recipe as a delicious grab-and-go breakfast, but serve it to guests nestled into some lovely cheese grits, alongside fresh fruits and French toast made on a panini press. These will hold up to the challenge. They double as thick wraps for shawarma, gyros, or as a flatbread for your meal.
