This was my first attempt at canning anything. Ever. I shouldn't have worried so much about preserving it. Everyone we gave this to as gifts one week ago has already finished theirs! Be prepared to dream of food as the whole house will smell like apple pie overnight as this cooks.

Carrot Cake Bites
No-bake energy bites with all the carrot cake flavor!
Balsamic Braised Pork Tenderloins with Fresh Figs
Use fresh figs to add some sweetness to these balsamic braised pork tenderloins. Bonus: There is no added sugar! The dish starts on the stove top and finishes in the oven, freeing you up for other tasks. We like this dish with roasted potatoes that let the oven do double duty. A simple green salad completes the meal.
Banana Bread Baked Oatmeal Bars
This is the perfect breakfast for those days when you really want a muffin but need something hearty and healthy like oatmeal. For the best flavor use a very ripe banana. Any fruit can be substituted for the banana, including dried fruit (cranberries!) and nuts. The bars are great the next day, too. Once cool, put the bars into the fridge, then pop them in the microwave for a few seconds before eating.
