This started out as an experiment for an alternative to beef, but it turned out to be the best meatloaf ever.
Ingredients
- 0.5 pounds ground turkey
- 0.5 pounds ground chicken breast
- 0.5 pounds bulk pork sausage
- 1 egg , beaten
- 1 packet crushed saltine crackers , 4 ounce
- 0.5 cups sweet barbeque sauce
- 1 tablespoon prepared yellow mustard
- 1 teaspoon hickory-flavored liquid smoke
- 2 teaspoons dried parsley
- 1 teaspoon dried minced onion
- 1 teaspoon onion powder
- 1 teaspoon garlic salt
- 1 teaspoon seasoned salt
Instructions
-

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan.

Combine the turkey, chicken, sausage, and egg in a large bowl. Stir in the saltine crackers, 1/2 cup barbeque sauce, 1 tablespoon of mustard, liquid smoke, parsley, dried onion, onion powder, garlic salt, and seasoned salt; mix well. Press into the prepared pan.

Bake meatloaf in preheated oven for 25 minutes. Combine the brown sugar with the remaining 2 tablespoons of barbeque sauce, and 1 tablespoon of mustard to make a glaze. Remove meatloaf from oven; brush with glaze. Return the meatloaf to the oven, and bake until no longer pink in the center, about 25 additional minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

Algerian Kefta (Meatballs)
This simple meatball dish is delicious, rich, and fresh. My Algerian husband taught me it as it's one of his favorites from home. The tomato sauce can be used for anything, and the flavors can be adjusted. I like a lot of garlic and pepper. I have found halal hamburger meat to be much leaner and lighter than regular. You can find it at international food stores and halal butcher shops in bigger cities. Serve this dish with a French baguette.
Bacon-Wrapped Grilled Elk Backstrap
Here's a delicious way to prepare elk: seasoned pieces of backstrap are wrapped in bacon, and grilled. This tasty meal is ready in under half an hour! I like to sprinkle the skewers with more Worcestershire sauce halfway through cooking.
Old-Fashioned Potato Salad
This potato salad recipe is for the traditional creamy type of potato salad, with eggs, celery, and relish. It's perfect for making ahead to let the flavors develop.
