This easy apple and avocado salad is perfect for a hot day. You wouldn't think a mixture of apples, avocados, blue cheese, and tangerine dressing would go together, but it's wonderful!
Ingredients
- 4 tangerines oranges , juiced
- 2 tablespoons olive oil
- 0.5 medium lemon , juiced
- 1 clove garlic , minced
- 0.5 teaspoons lemon zest
- salt to taste

Make the dressing: Combine tangerine juice, oil, lemon juice, garlic, lemon zest, and salt in a lidded container. Seal and shake until well combined.

Make the salad: Toss baby greens, walnuts, blue cheese, onion, and lemon zest together in a large bowl.

Mix in apple and avocado. Drizzle dressing over top and toss to coat.
