This apple zucchini bread is fluffy and light. Cinnamon and walnuts add a lovely flavor and crunch to this easy quick bread.
Ingredients
- 4 large eggs
- 1 cup white sugar
- 1 cup brown sugar
- 0.5 cups vegetable oil
- 1 teaspoon vanilla extract
- 3.5 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1.5 teaspoons baking soda
- 0.5 teaspoons salt
- 2 cups peeled , chopped zucchini
- 1 cup chopped , peeled apple
- 0.5 cups chopped walnuts

Gather the ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.

Whisk eggs, sugars, oil, and vanilla together in a large bowl until well blended. Combine flour, cinnamon, baking soda, and salt in a separate bowl.

Stir flour mixture into egg mixture until well combined. Fold in zucchini, apple, and walnuts until evenly distributed.

Pour into the prepared pans.

Bake in the preheated oven until the centers of each loaf spring back when pressed lightly, about 1 hour. Let loaves cool in the pans for 10 minutes before removing to a wire rack to cool completely.

Not Ya Mama's Oyster Dressing
Thirty-five years ago, a group of friends went to a little Italian restaurant south of New Orleans. We all fell in love with their oyster dressing. We ate it so often the guys made a bet to see who could duplicate the recipe. After many tries, one of our friends figured it out and won the bet. Last year I found the original restaurant recipe in a New Orleans cookbook; our friend hit the nail on the head. This is his version.
