This Swedish pancakes recipe was taught to my father by his mother, who was born in Sweden. My father then passed this authentic recipe to me. Kids love them, and there are never any leftovers when I make them. Spoon melted butter over the pancakes and sprinkle with sugar or serve with lingonberry sauce. The pancakes can be made into larger cakes; however, the yield will be smaller. You can also use the batter to make crepes.

Barley Lime Fiesta Salad
I got a barley salad at ShopRite and loved it so much that I had to make it. This easy recipe is what I came up with. I enjoyed this alongside my smoked chicken and bacon sandwich with avocado spread; it was the perfect complement! All the ingredients for the vinaigrette are by eye and to taste.
Shrimp Scampi with Pasta
Shrimp scampi with linguine is the ultimate seafood pasta dish. Works with any pasta; angel hair is less filling.
Chocolate Chai Coffee Mix
I was craving Starbucks® chocolate chai tea latte when I made this. It is not a copycat recipe, simply tasty and easy. International Delight® 'Sweet Cream' is fabulous in this, if you like sweet coffee. Cardamom gives it the slight licorice taste; if you omit it, that's fine too.
