- 8 slices bacon
- 1 tomato , chopped
- ½ onion , chopped
- 3 ounces shredded Swiss cheese
- 0.5 cups mayonnaise
- 1 teaspoon dried basil

Preheat the oven to 375 degrees F (190 degrees C). Lightly grease 32 mini muffin cups or line with paper liners.

In a skillet over medium heat, cook bacon until evenly browned. Drain on paper towels, then crumble into a medium mixing bowl. Mix in tomato, onion, Swiss cheese, mayonnaise, and basil.

Separate biscuits into halves horizontally, then cut each piece in half again for 32 pieces. Roll slightly to flatten, then place each piece into a prepared muffin cup. Spoon bacon mixture over top.

Bake in the preheated oven until golden brown, 10 to 12 minutes.

Grandma's Pineapple Upside-Down Cake
This is my grandma's pineapple upside-down cake! My grandma used to bake cakes and pies during the Great Depression and my grandpa would sell them door-to-door and on the street corners to support them during that awful time. This is one of my favorites.
Cranberry, Apple, and Fresh Ginger Chutney
This cranberry apple chutney is not overly sweet like traditional cranberry sauce, but it's got just enough sugar to keep your lips from puckering. The fresh ginger adds a nice bite, which becomes more pronounced as the chutney rests. Add it to leftover turkey sandwiches with a smear of cream cheese — it's heavenly!
