This baked apple empanadas recipe is a small half-circle doughy dessert with apple-cinnamon filling. If you don't like apples, you can fill them with anything. This is a good base recipe you can alter in any way you like! My family loves these!
Ingredients
- 1 cup unsalted butter
- 6 ounces cream cheese , softened
- 2 cups all-purpose flour
Instructions
-
1
Beat butter and cream cheese together in a bowl; stir in flour until dough comes together and forms a ball. Cover dough tightly with plastic wrap; refrigerate 8 hours to overnight.
-
2
Combine apples, sugar, cinnamon, and salt in a saucepan; bring to a boil. Reduce heat, cover, and cook, stirring frequently, until the consistency of chunky applesauce, about 15 minutes. Remove from heat; cool to room temperature.
-
3
Remove dough from the refrigerator; sit at room temperature for 30 minutes.
-
4
Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
-
5
Divide dough into 10 pieces; roll into balls. Roll out each ball with a rolling pin into a 3- to 4-inch circle. Fill one side of dough circle with apple filling. Moisten edges lightly with water; fold dough over filling and press edges together to seal.
-
6
Arrange empanadas on the prepared baking sheet.
-
7
Bake in the preheated oven until dough is golden, about 15 minutes.

Fiesta Chicken Enchiladas
Fiesta chicken enchiladas are a great recipe! I used green chile enchilada sauce instead of salsa. This recipe was the best; everyone went back for thirds!
Christmas Eve Manicotti
My mother is full-blooded Sicilian and always makes Christmas Italian food. We celebrated the Vigil and had seven fish dishes. Since my children were not fans of anything more than shrimp, I made Christmas Eve manicotti to replace the squid and octopus they didn't like. The crêpes, fluffy cheese, and spinach filling will also satisfy vegetarians.
Jalapeno Popper Mushrooms
My husband loves stuffed jalapeños and I like stuffed mushrooms, so I came up with this jalapeño popper mushrooms recipe that combines the two. Leave some of the seeds or ribs in the jalapeño for more heat! I like to use Neufchâtel cheese and turkey bacon for a lower fat version — it's just as tasty!
