Scrambled Eggs and Tomatoes
A fast meal of eggs scrambled with tomatoes, and then seasoned with some salt, sugar, and soy sauce. This was the very first recipe I cooked, with a little help from my parents...I think I was about 5 or 6 at the time. Eat as it is, or serve over rice.
Cranberry Pumpkin Muffins
These pumpkin cranberry muffins make a perfect addition to your Thanksgiving table, but don't stop there. Think grab-and-go breakfasts, afternoon snack with tea, even bake sale! Made with pumpkin puree, dried cranberries, and a quartet of warm fall spices, these simple muffins are ready to enjoy in less than 45 minutes.
Sesame Pepper Stir Fry
Use the meat and veggies you have on hand, or stick to cabbage and peppers for a quick, flavorful, and basic stir fry. Hubby and kids gobble this down before a pretty photo is possible! Serve over rice. This provides 4 people with enough for second servings or a great next-day cold lunch. Chicken, pork, or seafood works as well as beef. Add extra veggies as desired except for more brassicas. Can replace cabbage with broccoli if desired. Great 'whatever's in the fridge' stir fry. Enjoy!
