Baked Brie with Maple Caramelized Apples and Spiced Praline Bacon
This baked Brie recipe is a party in your mouth. It's creamy, smoky, spicy, and sweet with maple caramelized apples and spiced praline bacon. It makes for a dramatic appetizer that will wow at your Thanksgiving cocktail hour! The recipe also works with a 16-ounce round of Brie if you're feeding a big crowd. Serve with a baguette or your favorite crackers.
Ingredients
- 3 stripss bacon
- 2 tablespoons finely chopped pecans
- 1 tablespoon brown sugar
- 1 teaspoon chili powder
- sea salt to taste
- 2 tablespoons unsalted butter
- 2 Goldens Delicious apples , peeled, cored, and cut into
- 3 tablespoons pure maple syrup , divided
- 0.25 teaspoons ground cinnamon
- 1 round Brie cheese , 8 ounce
- 1 teaspoon chopped fresh rosemary , Optional

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.

Lay bacon strips in a single layer on the prepared baking sheet. Combine pecans, brown sugar, chili powder, and sea salt in a bowl; evenly sprinkle over bacon.

Bake in the preheated oven until browned and crisp, 18 to 20 minutes. Transfer to a rack to cool. Chop bacon into rough pieces.

Melt butter in a nonstick skillet over medium-high heat. Add apples and 1 tablespoon maple syrup; sauté, stirring only every 60 to 90 seconds, until apples are tender and brown, about 8 minutes.

Stir in remaining 2 tablespoons maple syrup and cinnamon; transfer to a bowl.

Cut a round of parchment paper slightly larger than the round of Brie cheese; place onto a baking sheet. Place Brie on the parchment round; top with apples, making a big mound.

Bake in the preheated oven for 5 minutes. Add bacon-praline mixture on top of Brie; continue baking until top is bubbly, 2 to 3 minutes more.

Transfer to a serving platter using a large spatula; sprinkle with sea salt and rosemary.

McNamara's Irish Soda Bread
A recipe handed down by my grandmother Anna Marie McNamara (nee Player). This is a great recipe for a light tea dessert bread. Delicious with light butter hot out of the oven. You can use any type of milk. I usually make this bread when my milk is about to go sour. I like to use raw crystallized sugar in place of the white granulated sugar. My father likes to use buttermilk.
