Gluten-free, health-conscious muffins!
Ingredients
- 1.5 teaspoons butter
- 1.25 cups flaxseed meal
- 0.25 cups white sugar
- 2 tablespoons chia seeds
- 1 tablespoon baking powder
- 1.5 teaspoons ground cinnamon
- 3 ripes bananas , mashed
- 3 eggs , beaten
- 1 apple , chopped
- 0.5 cups coconut flakes , or more to taste

Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin with butter.

Combine flaxseed meal, sugar, chia seeds, baking powder, and cinnamon in a bowl. Add bananas, eggs, and apple; mix batter thoroughly. Stir in 6 tablespoons coconut flakes. Fill tin 3/4 full with batter. Sprinkle remaining 2 tablespoons coconut flakes on top.

Bake in the preheated oven until tops spring back when lightly pressed, about 30 minutes.

Slow Cooker Green Beans, Ham and Potatoes
This crockpot green beans and potatoes recipe is easy to make in your slow cooker. I make this dish often, but I have never measured the ingredients, so this recipe is a reasonable approximation. Freeze the leftover cooking liquid and add it to bean soup, ham and cabbage dishes, or use it to boil dumplings. It's delicious!

The ginger is my addition because I'd add ginger to almost anything. If you don't agree, sub vanilla vodka for the ginger liqueur.
