Using two of our family's favorites, bananas and eggnog, I came up with this yummy cake! Very moist and flavorful!
Ingredients
- 3 cups all-purpose flour
- 1.5 teaspoons baking soda
- 0.25 teaspoons salt
- 0.75 cups margarine
- 2.25 cups white sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 1.5 cups eggnog
- 1.5 cups mashed bananas

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch pan.

Mix flour, baking soda, and salt together in a large bowl. Beat margarine and white sugar together in a separate bowl until light and fluffy. Beat in eggs, one at a time, until fully incorporated; stir in 2 teaspoons vanilla extract. Stir butter mixture into flour mixture, alternating with eggnog, until well combined. Fold in bananas. Pour batter into prepared pan.

Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour. Remove from oven and cool on a wire rack, about 1 hour.

Beat butter and cream cheese together in a bowl until creamy and smooth; beat in 1 teaspoon vanilla extract. Add confectioners' sugar; beat on medium-low speed with an electric hand mixer until combined. Spread frosting onto cooled cake.

French Silk Pie without Eggs
This is a beautiful, fluffy French silk pie made without raw eggs. I recently made one for a pie auction and it sold for $65! Yes, it really is that tasty. I've been making this pie by memory for years, and I have no idea of the recipe's origin. Garnishing the pie with extra whipped cream and chocolate curls makes it fabulous!
Ba'corn Cheese Corn
This bacon-studded "cheese corn" is a popular bar snack in Korea, made of pure bacon-y, creamy, cheesy, corny decadence. The original recipe combines mayonnaise and sweetened condensed milk, but we're going with heavy cream here for a lighter approach. This may be the first time in my career that I've "lightened up" a recipe by adding a cup of heavy cream. Garnished with green onions, this would be amazing with a cold beer!
Heather's Beef Enchiladas
This beef recipe is one of my family's favorites. The enchiladas can be made in advance and then reheated, or you can make the different components ahead of time and assemble and bake for a quick dinner. Serve with sour cream and picante sauce or salsa.
