- 1 fresh pineapple
- 0.25 cups rum
- 0.25 cups brown sugar
- 1 tablespoon ground cinnamon
- 0.5 teaspoons ground ginger
- 0.5 teaspoons ground nutmeg
- 0.5 teaspoons ground cloves

Peel and core whole pineapple, then slice into eight rings. Place pineapple rings in a shallow dish or resealable plastic bag. Mix together rum, brown sugar, cinnamon, ginger, nutmeg, and cloves in a small bowl. Pour marinade over pineapple. Cover and refrigerate 1 hour to overnight.

Preheat the grill for high heat. Lightly oil the grate.

Remove pineapple rings from the dish and reserve remaining marinade for serving.

Grill pineapple rings until dry and char-marked, about 7 minutes on each side. Serve with remaining marinade.

I've had people ask me if it is chicken salad, because the pineapple adds a texture that is similar to shredded chicken, and the savory ingredients mask the pineapple flavor. It's perfect for a little bite before a meal or a satisfying afternoon snack on your favorite crackers. If you like, you can sneak in some vegetables, and serve it on celery sticks, or those little tri-color mini bell peppers, cut in half.
