For those of you who have difficulty locating berbere (Ethiopian spice) in your local grocery store, this recipe is a good substitute that is easy to make. Note that it is quite spicy, so use it to taste. This spice combination is used in many Ethiopian dishes including doro wat, an Ethiopian chicken dish.
Ingredients
- 1 cup red chili powder
- 0.5 cups paprika
- 1 tablespoon salt
- 1 teaspoon ground fenugreek
- 1 teaspoon ground ginger
- 1 teaspoon onion powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cardamom
- 0.5 teaspoons garlic powder
- 0.25 teaspoons ground cloves
- 0.25 teaspoons ground cinnamon

Combine chili powder, paprika, salt, fenugreek, ginger, onion powder, coriander, cardamom, garlic powder, cloves, and cinnamon in a bowl. Transfer to an airtight container; store in the refrigerator.

My Italian grandmother makes these every year when the zucchini in her garden start to blossom. She is Sicilian and calls them "cripelli." It's sort of like a fritter and so yummy.
