I made these chicken croquettes as a surprise for my mom on Mother's Day. She used to get chicken croquettes at a fancy restaurant when she was a young woman. She loved them!

- 0.5 cups Italian-style dry bread crumbs , for rolling

- 0.5 cups milk
- 0.13 tablespoons poultry seasoning

Combine chicken, 1/3 cup of condensed soup, bread crumbs, celery, onion, and 1/4 teaspoon poultry seasoning in large bowl; mix well and shape into 6 croquettes (or patties). Chill in the refrigerator for about 1 hour.
-
2
Roll croquettes in additional bread crumbs. Melt butter in a large skillet over medium heat; add croquettes and cook until golden and browned, about 3 to 4 minutes per side.

Chocolate Mint Pie
This pie has a chocolate cookie crust and an ice cream filling, but the creme de menthe meringue topping is what makes it special. It is a perfect St. Patrick's Day treat. Vanilla ice cream can be substituted for the mint chocolate chip.
Louisiana Crawfish Bisque
This crawfish bisque recipe is creamy and hearty. My mom and I make it frequently — always to rave reviews. Being from Louisiana, I am happy to be able to make a crawfish bisque better than what I've tried at any restaurant. Serve with French bread and a nice salad.
