This Bisquick coffee cake is better than any you'd get at a bakery. It took me a while to get this recipe just right.
Ingredients
- 2 cups baking mix , such as Bisquick®
- 0.67 cups milk
- 1 large egg
- 2 tablespoons white sugar
- 0.25 teaspoons ground cinnamon
Instructions
-
1
Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-inch square baking dish.
-
2
Make the cake: Mix baking mix, milk, egg, sugar, and cinnamon together in a bowl until well combined; spread into the bottom of the prepared baking dish.
-
3
Make the topping: Mix baking mix, brown sugar, butter, and cinnamon together in a separate bowl using a fork or pastry blender until crumbly. Sprinkle evenly over batter, then drag a butter knife across the top in a crisscross pattern.
-
4
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.

This chicken scallopini with piccata sauce makes an awesome romantic dinner for two. Many have heard of veal scallopini, but you can make this Italian dish with any meat or vegetables. The trick is to use a demi-glace of the same style; for example, a venison demi-glace if using deer.
