To prepare this cocktail, pour absinthe over a sugar cube into a glass and then light cube on fire to caramelize the sugar before dissolving it into the glass. It's a favorite cocktail at the Old Absinthe House in New Orleans.

- 1 sugar cube
- 2 fluids ounces absinthe
- 4 fluids ounces cold water , or to taste

Place sugar cube on an absinthe spoon or in a small strainer set over a glass. Pour absinthe over sugar cube into the glass.

Light sugar cube on fire and allow sugar to caramelize for 10 to 15 seconds. Slowly pour water over sugar cube until it dissolves and drink begins to turn opaque. Stir to combine.

Clothes Pin Cookies
Puff pastry cookies wrapped on clothes pins, baked and then filled. 1/2 inch to 5/8 inch dowels cut 4 inches long work well. Clothes pins may spring open in the oven and break the pastry. These are best if baked on insulated cookie sheets.
