Easy No Cook Tuna and Avocado Tostadas
These easy no cook tuna and avocado tostadas make a quick summer dinner with zero time spent over the stove. Just season canned tuna, add a little mayo, mash an avocado, and layer on a tostada shell.
Te de Canela (Cinnamon Tea)
I have been drinking te de canela, or cinnamon tea, since I was a kid. My mother always made it for us when we had a sore throat, a fever or just because. This cinnamon tea can be sweetened with honey, sugar, or piloncillo, which is Mexican brown sugar, and we often added a squeeze of fresh lemon juice. As adults the tea is spiked with pure cane alcohol, which is very common amongst Hispanic people.
Creamy Kale Salad
I made this creamy salad dressing for kale with my cousin Pam when I had kale coming out of my ears from the garden! We added red onion and some raisins for sweetness. It is delicious and tastes even better the next day.
