Irish potato griddle cakes, made from both baked potato and raw, grated potato, are pan fried until crisp and golden. Serve them with butter or honey.
Ingredients
- 0.5 pounds potatoes , unpeeled
- 1.5 cups buttermilk
- 0.5 pounds potatoes , peeled and grated
- 1.75 cups all-purpose flour
- 1 teaspoon baking soda
- salt and ground black pepper to taste
- 2 tablespoons butter , or as needed
Instructions
-
1
Preheat oven to 450 degrees F (230 degrees C). Scrub the unpeeled potatoes and prick them several times with a fork; place onto a baking sheet.
-

Bake in the preheated oven until the potatoes are easily pierced with a fork, 50 minutes to 1 hour. Remove, cool, and peel. Mash the potatoes with the buttermilk. Stir in the grated raw potato, flour, baking soda, salt, and pepper.
-

Melt the butter in a large skillet or griddle over medium heat. Scoop the potato mixture into the skillet to make 3 inch cakes. Fry until golden and crisp, turning once, about 5 minutes per side.

That Addicting Salad
The salad that initiated a year-long quest to duplicate the recipe! When I threw yet another attempt at the dressing in the fridge overnight, I hit on the secret ingredient. A huge hit with guests!
Colorado Green Chili (Chile Verde)
This Colorado green chili is my version of my mother's green chili. I like to serve it over oven-baked burritos or with beans and rice. If you can't find a chile roaster, look for frozen diced chiles at your supermarket. You can also freeze fresh roasted chiles for off-season use.
Waffled Falafel
Waffled falafel is a delicious twist on a classic! Keep the cooked waffles warm in a low oven. Serve them with hummus, tomatoes, cucumbers, and parsley.
