Chicken à la King
Chicken à la king is easy and elegant. It's a great way to use leftover chicken or turkey. Green pepper and red pimientos make this a pretty dish to serve at Christmas or anytime. Serve over cooked rice, toast, or noodles. Can be made ahead and reheated.
Spicy Mango Relish
Just chop some fresh mango, add a few simple ingredients, and believe it or not, this spicy mango relish is done! Not only is this pretty, but it's versatile and delicious on so many things, from something as simple as tortilla chips to fancier things like seared prawns. You can't beat this sweet heat on spicy meat!
Chicken Fra Diavolo
This chicken fra diavolo is chicken thighs in my version of fra diavolo sauce, the spicy Italian pepper and tomato sauce with fresh herbs and white wine, usually used with seafood. We like spicy, and I wondered, "why not chicken?" We liked it with crusty bread, to get every last drop of the sauce.
