At first glance this grilled bruschetta pizza might resemble pizza margherita, but the addition of balsamic glaze takes it in a different direction.
Ingredients
- 1 pound pizza dough
- 2 tomatoes , seeded and chopped
- 2 cloves garlic , minced
- 4 basils leaves , torn
- salt and ground black pepper to taste
- 2 teaspoons olive oil
- 1 pinch garlic powder
- 5 slices mozzarella cheese , 1 ounce
- 1 tablespoon balsamic glaze , or as needed

Preheat a gas grill with all the burners on High for 10 to 15 minutes. Shape the pizza dough.

Stir tomatoes, garlic, and basil together in a small bowl. Season with salt and pepper; set aside.

Reduce the flame on half of the grill burners to Low, to create areas of direct and indirect heat.

Carefully place dough onto the grill over direct heat. Close the cover. Let dough grill until the bottom is just barely cooked and shows char marks, 1 to 3 minutes.

Use tongs to flip pizza dough over; move to the indirect heat. Brush dough with olive oil, and sprinkle with garlic powder. Place mozzarella slices on pizza.

Grill until cheese is melted, about 3 minutes. Carefully remove pizza from the grill.

Top with tomato bruschetta and drizzle with balsamic glaze. Slice into wedges and serve.

Carolyn's KOOL-AID Pickles
The kids I babysit for love these -- red Kool Aid gives ordinary pickles a bright red color and adds fruity sweetness to their normal tang. I'm told they originated in the Southern US. I've also heard they are bar snacks, which may explain a lot. They are pretty, but I have to admit that I don't care for them very much.
Mississippi Mud Pie II
This delicious crust is made with flour, chopped walnuts and butter, pressed into a 9-inch pie tin, and baked till lightly golden. It 's then filled with chocolate pudding that is then smothered with a sweetened whipped cream and cream cheese frosting.
Chicken Chop Suey
This chicken chop suey recipe tastes very similar to the one at my favorite Chinese restaurant. There is a lot of chopping, but it's well worth the effort! We like it with noodles or vegetable fried rice.
